I wanted to emulate the taste of scrambled eggs in pita bread. I am still not entirely sure I achieved my goal with this recipe, but once I tasted these “scrambled chickpeas”, I didn’t care. Absolutely delicious!

Either pile the salad in with the chickpeas or eat them separately, but the chickpea mix needs some freshness, so be sure not to leave out the lemon juice and coriander.

Use any salad ingredients, but the homemade dressing with it’s tahini adds to the taste experience, so try to make the dressing for the salad too, instead of using something else.
